Acclaimed Japanese dining concept Hikiniku To Come recently made its highly anticipated debut in Singapore and we went down to try it out.

Originating from Tokyo’s vibrant Kichijyoji district, the brand has garnered a steady cult following for its signature hamburg steak on rice experience. By stripping away all culinary distractions and focusing on a single, unassuming comfort dish, the restaurant has elevated standard lunchtime fare into a refined and intentional dining ritual that is already drawing a strong, passionate crowd daily at the Singapore outlet.

Hikiniku To Come at VivoCity

The concept is elegantly simple, serving just one thing: high-quality hamburger steak and premium rice. The name itself translates literally to Minced Meat and Rice, and the entire kitchen operates with singular devotion to those two elements.

For local diners seeking immediate gratification, the restaurant offers an intimate 28-seater counter-style layout with an additional private dining room that seats ten. Diners are seated across three distinct counters strategically arranged around central grills, offering everyone a front-row view of the chefs working over live fires. The vibe is incredibly buzzy and theatrical, celebrating transparency, craftsmanship, and the pure joy of food served at the exact second it achieves perfection.

We went for a media tasting to experience the standard Hikiniku To Come Set Meal, which is priced at an accessible S.90. This carefully structured progression consists of three beef patties, each weighing 90 grams and fashioned from 100% Japanese beef.

The kitchen grinds the meat in-house daily under strict temperature controls in a dedicated, cold room before hand-shaping them using a distinctive popping technique that minimises heat transfer from the chefs’ hands.

Each patty is then grilled over premium binchotan charcoal and delivered to your personal grill station one at a time, timed to your specific dining pace.

True to the very prescriptive Japanese way of dining, there are specific instructions and steps provided on an illustrated card to help you enjoy the food to the maximum.

The first patty is served straight from the fire onto your bowl, and you are encouraged to eat it completely as is.

This allows the palate to experience the pure, unadulterated richness of the Japanese beef, enhanced by the smoky aroma from the charcoal. Resting the meat directly on top of the rice allows the grains to soak up the luxurious, dripping juices, making subsequent bites even tastier.

The second patty shifts the flavour profile toward a brighter, more balanced experience.

For this round, it is recommended to top the beef with a generous portion of freshly grated radish and a drizzle of homemade ponzu vinegar. The zesty acidity balances the sinful fat of the beef, offering a refreshing contrast that resets the palate.

The third and final patty delivers the grand finale. You can dip your beef directly into a beaten egg yolk, or enrich your rice bowl by mixing a free-flow fresh egg with premium soy sauce.

This transforms the remaining rice into a luxurious, ultra-creamy tamago kake gohan (Japanese raw egg rice), layered elegantly with the savoury depth of the remaining meat juices. For us, we preferred to use the raw egg as a dip.

The restaurant sources premium Sakura or Hinata eggs flown directly from Japan to ensure a rich colour and deep flavour profile that enhances the beef.

Every component of the meal has been treated with an exacting attention to detail. The rice is far from a mere side note; it is the definitive co-star of the show. Cooked continuously in staggered intervals inside traditional Hagama pots throughout the day, the premium Japanese grains are washed, soaked in sake overnight to enhance natural sweetness, chilled, and rapidly brought to a boil to achieve a fluffy yet structured consistency.

Rice refills are entirely unlimited and served piping hot to complement the hamburg steaks at every stage. For those who want extra protein, additional patties can be ordered individually for S.90 each.

To customise your meal further, a curated selection of house-made condiments sits at the counter, including oil-marinated green chilis, Japanese pepper sauce, and signature soy sauce flakes. This ensures that despite the menu’s extreme simplicity, no two bites need taste exactly the same.
