Perched on the 75th floor of Merdeka 118, Park Hyatt Kuala Lumpur unveils three new dining destinations that redefine the city’s culinary and social scene: Merdeka Grill, Cacao Mixology & Chocolate, and Park Lounge. Together, they showcase Park Hyatt’s hallmark of refined hospitality, elevated by sweeping views of the Kuala Lumpur skyline.

Merdeka Grill: A Theatrical Dining Experience

At Merdeka Grill, world-class techniques meet tableside artistry. Executive Chef Stig Drageide brings his global expertise and Norwegian roots to a menu that highlights premium cuts, sustainable seafood, and locally sourced ingredients. Guests can indulge in signatures such as Cedar-wood Roasted Salmon with Caviar and Smoke Butter Sauce and the 7 Days Dry Aged Chateaubriand with Freshly Grated Wasabi, paired with mustards prepared tableside. Even desserts impress, with creations like Penang Vanilla Ice Cream topped with Oscietra Caviar.

Cacao Mixology & Chocolate: Where Cacao Meets Cocktails

Cacao Mixology & Chocolate introduces a one-of-a-kind bar experience that celebrates cacao’s versatility. Spearheaded by Beverage Manager Lee Wei Lung, the bar offers chocolate-inspired cocktails, small-batch spirits, and creative zero-proof options, all set to the rhythm of bossa nova.

A highlight is the dramatic 19kg house-made 70% Dark Chocolate block, chiselled tableside by Executive Pastry Chef Holger Deh, alongside handcrafted pralines and truffles. Standout drinks include the refreshing Cacao Nut Highball and the layered Cacao Club, while mindful drinkers can explore inventive options like the Kesum Cacao Spritz and Asamboi Cacao Virgroni.

Park Lounge: A Tribute to Malaysian Heritage

For those craving comfort with a cultural touch, Park Lounge revives Malaysia’s long-lost recipes through an all-day dining menu. Highlights include Botok Ikan, a Sarawakian dish of spiced mackerel steamed in banana leaf, and Udang Kara Nyonya Laksa, a luxurious lobster laksa rich in heritage flavours.

Afternoon Tea here is an elegant four-course journey, featuring handcrafted savoury and sweet creations. The experience is elevated with a roaming dessert trolley and the signature Mille Feuille sliced tableside.
