There is a new fast casual concept in Singapore and it is brought in via a collaboration between Singapore’s Select Group and Taiwan’s Lao Ma Ban Mian (老媽拌麵). The latter is known for their sun-dried Guan Miao (關廟) noodles, a Tainan specialty and is well-loved by many Taiwanese celebrities:
The Taiwan noodle brand will be making its debut in Singapore at West Mall on 15 April 2025, serving up authentic Taiwanese favourites, ranging from hearty broths to flavour-packed dry noodles.
Lao Ma Ban Mian diffentiates itself in the crowded F&B scene in Singapore with its handcrafted, sun-dried noodles, available in two styles: wavy Guan Miao noodles for robust sauces and soups, and traditional Guan Miao noodles for a smoother bite.
The brand, founded in 2013, has gained a loyal following for its dedication to traditional Taiwanese flavours, using recipes inspired by the founder’s childhood memories of home-cooked meals.
We were invited for a closed door media tasting yesterday and got a sneak peek of the menu, trying out many of their signature dishes:
Chili Oil Preserved Egg & Meat Sauce Noodles ($12.50)
The signature dish and a must-try.
The intense, rich blend of century egg, spicy chili oil, and savoury meat sauce is unlike anything else in Singapore. A bold, unforgettable flavour.

Garlic Fermented Soy Pork Chop Noodles ($14.50)
The pork chop was tender and packed with flavour, though the noodle seasoning leaned slightly salty, suited for those who love bold, heavy flavours.
Dried Scallop Huadiao Chicken Noodle Soup ($16.50)
A comforting bowl of slow-simmered broth with chicken, Jinhua ham, and scallops, elevated with aromatic Huadiao wine.
Chicken Clam Soup ($12.00)
A sweet and savoury twist on the classic chinese chicken soup, enriched with fresh clams for extra depth.
Fried Egg Braised Pork Rice ($5.50)
You cannot go wrong with this for Taiwanese comfort food. You can eat it on its own or to accompany other side dishes.
Braised Beef Brisket ($7.00)
Tender and flavourful, cooked in a fragrant soy-based sauce with star anise and Sichuan peppercorns.
Braised Pig’s Trotter ($10.00)
Chewy and tangy, with a rich, gelatinous texture. Different from the usual Singapore-style braised pig’s trotter which is drenched in gravvy and heavier in flavours.
Braised Tofu Skin ($4.50)
Blanched Vegetables with Fried Shallots ($4.50)
Long Beans with Sesame Sauce ($4.50)
All excellent cold starters under $5, balancing textures and flavours, for sharing before the main meal.
