Singaporean food enthusiasts can now experience the pristine tastes of Tasmania without leaving the city, thanks to a collaboration between Little Farms and Trade Tasmania. The two-day Taste Tasmania event, held on 4 and 5 April 2025, showcased the island’s premium produce, from artisanal cheeses to sustainably harvested seafood. While the celebrations have concluded, the curated selection of Tasmanian goods remains available at Little Farms stores for those eager to bring a slice of the island’s culinary excellence home.
We were invited to a preview dinner on 3 April and were treated to a meticulously crafted menu that highlighted Tasmania’s finest ingredients, paired with the island’s acclaimed wines and spirits. Here’s a closer look at the dishes we sampled and their Tasmanian inspirations:
Taylor Collins Cocktail
A refreshing start to the evening, this gin-based drink featured Taylor & Smith Gin, a handcrafted spirit distilled with pure Tasmanian water and native botanicals. Mixed with lemon juice, sugar syrup, and soda, it set the tone for the meal.
Miso-Glazed Three Friends Abalone
The star of this dish was the sustainably harvested abalone from Three Friends Abalone, known for its delicate texture. Served with shimeji mushrooms, ikura, and spring onion, it was paired with 2022 Haddow + Dineen 100 Days Methodé Ancetrale, a sparkling Tasmanian wine that complemented the umami flavours.
Heirloom Tomato Carpaccio
This vibrant dish featured Leatherwood Honey from The Tasmanian Honey Company, drizzled over heirloom tomatoes alongside a balsamic reduction, dehydrated olives, and crispy basil.
The pairing, 2024 Haddow + Dineen Sehnsucht Riesling, added a crisp contrast to the sweet and tangy notes.
Woodbridge Smokehouse Smoked Salmon Orzo
Pure Foods Tasmania’s premium smoked salmon took centre stage in this hearty orzo dish, accompanied by green asparagus, peas, sundried tomato, and lemon.
The 2022 Haddow + Dineen Bull in the Heather Pinot Noir enhanced the smoky richness of the salmon.
Tasmanian Lamb Barbacoa
Slow-cooked lamb leg, marinated in Bruny Island Whey Stout, was served with warm tortillas, pickled onions, and lime. The robust flavours were elevated by 2022 Haddow + Dineen Crows Descended Shiraz, a bold red wine.
Storm & India Matcha Burnt Cheesecake
The dessert featured Storm + India’s organic matcha, blended into a creamy burnt cheesecake topped with Granny Smith apple compote and lime zest, featuring a balance of tart and sweet.
