[Review] VUE Bar and Grill’s Spring Menu: A Masterclass in SILERE Alpine Merino Lamb

Singapore’s premier rooftop dining destination, VUE Bar and Grill, has partnered with SILERE New Zealand Alpine Merino Lamb to create an exceptional Spring menu available from 28 March to 23 June 2025.

During an exclusive tasting, we experienced the full spectrum of this collaboration, ranging from delicate raw preparations to hearty grilled dishes, all showcasing the lamb’s remarkably clean, non-gamey flavour profile.

Raised in New Zealand’s Southern Alps, SILERE Merino lambs graze on wild thyme and golden tussock grasses, resulting in meat that’s naturally tender with subtle herbal notes.

Vue’s Executive Chef Sam Chin gave his stamp of approval for SILERE lamb, describing it as “naturally lean yet beautifully marbled, with a fuller-bodied flavour and tight-grained texture.” 

Below are the dishes I sampled from Vue’s Spring menu, including both dishes featuring SILERE lamb as well as some alternative choices.

This standout starter featured hand-chopped lamb crowned with Oscietra caviar.

The clean flavour of the raw lamb is enhanced with pickled sakura leaves and egg yolk gel. The combination was remarkably balanced. It was rich yet bright, with the caviar adding luxurious salinity.

This was the first time I tried lamb tartare and it was surprisingly good and not gamey at all. I would highly recommend ordering this to experience the natural flavour of the SILERE lamb.

A refreshing contrast, this dish paired buttery kingfish with smoky bonito vinegar and grilled mussels as an alternatives to those who prefer seafood to meat.

Plump Hokkaido scallops met cauliflower purée and curry cream, topped with a generous spoonful of Oscietra caviar. The warm spices in the curry cream adds an extra kick.

A comforting yet refined preparation, featuring slow-braised lamb wrapped in cannelloni with crispy sweetbreads. The raspberry coulis cut through the richness brilliantly, while the lamb jus tied everything together.

Another must-try dish to savour the natural goodness of SILERE lamb.

Creamy Hokkaido sea urchin foam enveloped al dente multi-grain rice, with Parmigiano adding sharpness. The uni’s briny sweetness shone through without overwhelming the palate.

A heartier option infused with Ras El Hanout spices and grilled lamb neck. The pomodoro base kept the dish vibrant, while the tender lamb provided satisfying depth.

Encased in golden, flaky pastry, the perfectly pink lamb rack stood out with its chili-cumin pesto and spring pea purée.

The herbaceous buttermilk sauce added a refreshing finish. Think a lamb version of a Beef Wellington.

Spanish Lubina (Sea Bass)

For seafood lovers, the moist sea bass pairs well with bottarga and a velvety kale velouté. An alternative to the lamb main.

Desserts

Sobacha Dark Chocolate

Sobacha Dark Chocolate

An inventive combination of buckwheat mousse, fermented soy caramel, and cereal milk ice cream, this dishe presents earthy, sweet, and umami notes in perfect harmony.

Shizuoka Musk Melon

Shizuoka Musk Melon

The air-flown Japanese melon with seasonal sorbet was a refreshing palate cleanser, though the S$28++ supplement makes it a splurge-worthy option rather than an essential choice.

Beyond the food, VUE’s 19th-floor panoramic views of Marina Bay create an unforgettable setting. The Spring tasting menus are priced at:

  • 3-course: S$128++
  • 4-course: S$168++
  • 5-course: S$198++

Overall, this collaboration succeeds by letting SILERE’s exceptional lamb shine across diverse preparations while maintaining VUE’s signature bold flavours. Standouts like the lamb tartare, ragout, and pithivier showcase the ingredient’s versatility, while seafood options like the uni risotto and lubina ensure balance for all preferences.
