[Review] Savour the Essence of Phuket at Grand Copthorne Waterfront’s Thai Culinary Extravaganza

Grand Copthorne Waterfront Hotel has teamed up with the Royal Thai Embassy to present the Phuket Flavourscape Buffet, a gastronomic fiesta celebrating the best of Thailand’s cuisines hailing from Phuket.

The buffet is a result of the collaboration between Chef David Toh, Executive Chef at Grand Copthorne Waterfront with over 35 years of experience, and Chef Witoon Kamonphun, Head Chef at Beast & Butterflies, M Social Hotel Phuket. Together, they have curated a menu that seeks to blend traditional Thai flavours with innovative twists to present a unique dining experience.

Guests can indulge in a variety of authentic Thai dishes, these are some of the highlights we experienced during a dinner tasting over the weekend:

DIY Som Tam: papaya, corn or mango salad
Thai Boat Noodles
Tom Yum Soup
Mango Sticky Rice
Thai Pork Ribs
Pork skewers
Pineapple Fried Rice
Thai Pancakes

The Phuket-inspired Thai buffet spread offers a mix of street snacks, elevated dishes as well as some quirky offerings. For the adventurous, try the high-protein insect options inspired by Thailand’s bustling night markets: the Silkworm Thai Basil Pork Pizza and the Crispy Cricket Onion Quiche. We savoured the former and found it quite palatable and easy to stomach.

To complement the meal, the hotel’s resident Thai mixologist, Taenny Mookeai, has crafted Thai-inspired drinks. Beverage partners such as Chang Beer and Tarsier Spirit also offer a range of refreshing options.

Overall, we have always been impressed by the buffet quality at Grand Copthorne Waterfront hotel and this is no exception with their latest culinary offering.

The Phuket Flavourscape Buffet is available at Food Capital, the hotel’s all-day dining venue from 15 February to 15 April, with the following pricing and timing:

Lunch 12:00PM to 2:30PM
Monday to Saturday
$72++ per adult, $36++ per child

Dinner 6:00PM to 10:00PM
Sunday to Thursday
$102++ per adult, $51++ per child

Friday and Saturday
$112++ per adult, $56++ per child
