[Interview] Returning to Bras Basah: The Journey of Han Choon Fook, Founder of Han’s

For Mr. Han Choon Fook, founder of the beloved home-grown Han’s restaurant group, the journey of food and community began in the heart of Bras Basah.

It was here, in the then bustling Hainanese kampong, that his grandparents ran a modest coffee stall on Seah Street. Serving local drinks and kaya toast, the shop was not just a business but a cherished gathering spot for the community.

“My fondest memories are of staying overnight with my grandparents and watching them make coffee,” Mr. Han recalls.

Growing up surrounded by their dedication and the vibrant energy of the neighborhood, he developed a deep appreciation for the role food plays in bringing people together. Those formative years, combined with his family’s roots in the F&B industry, shaped his vision for Han’s as a brand that blends British and Hainanese culinary traditions.

Building Hanis Cafe & Bakery: A National Library Landmark

Among the many milestones in Mr. Han’s career, the National Library outlet holds a special place in his heart. For 18 years, this cafe served as more than just a dining spot. It developed organically into a community hub. Initially branded as Han’s, it was later rebranded to Hanis, the halal counterpart, following feedback from the National Library Management.

“The National Library outlet was always filled with happy customers. It became a place where people connected, whether over a quick meal or a long conversation,” Shares Mr. Han. The outlet symbolised the harmonious blend of culture and community, a hallmark of Han’s ethos.

However, the COVID-19 pandemic brought unprecedented challenges. Sales dropped by over 50%, and rising operational costs made the business unsustainable. After much deliberation, Mr. Han made the painful decision to close the outlet.

“It was heartbreaking,” he admits. “But I chose to focus on moving forward.”

A Promise Kept: Returning to Bras Basah

The closure of the National Library outlet marked the end of one chapter but also the beginning of another. Determined to stay connected to the Bras Basah community, Mr. Han made a promise to his loyal customers: Han’s would return.

In 2024, he fulfilled that promise by opening a new outlet at Odeon 333.

For Mr. Han, this move is deeply personal. “Bras Basah is not just a location; it’s part of my identity,” he explains. The new outlet represents his commitment to preserving the area’s cultural heritage and creating a space where people can once again gather over familiar flavorus.

The menu continues to reflect Han’s signature blend of British and Hainanese dishes, including classics like fish and chips and Hainanese pork chop. More than the food, Mr. Han also hopes the new outlet will rekindle the same sense of belonging and community that his grandparents’ coffee stall once offered.

Preserving Heritage and Looking Ahead

While Mr. Han dreams of creating a new brand rooted in his Hainanese heritage, his current focus remains on strengthening Han’s and ensuring its relevance in Singapore’s evolving food landscape. He acknowledges the challenges ahead, from a shortage of manpower to growing competition from international brands. Yet, he remains optimistic about the future.

“Han’s is more than a restaurant—it’s a reflection of Singapore’s culinary story,” he says. “I hope it inspires others to appreciate and preserve our local heritage.”

As Mr. Han continues to navigate the dynamic F&B industry, his journey serves as a poignant reminder of the power of food to connect people, celebrate heritage, and build community. From a humble coffee stall in Bras Basah to a household name across Singapore, Han’s story is one of resilience, tradition, and passion.
