In celebration of its 10th anniversary, UNA at Alkaff Mansion launched a new menu featuring Spain’s prized Rubia Gallega beef, marking its first availability in Singapore.
The Spanish Rubia Gallega beef is a rare breed with only 40,000 animals primarily found in Galicia, Spain. It has won Gold, Silver, and Bronze medals at the World Steak Competition and is served in Michelin-starred restaurants worldwide. Its rarity makes it a coveted delicacy and we were looking forward to tasting it for the first time here.
The new menu at UNA, co-conceptualised by Chef Diego Grimberg of the Michelin-starred Hofmann Restaurant in Spain and UNA’s Executive Chef Tom Kung, highlights the introduction of this highly regarded beef, known for its melt-in-the-mouth texture and rich, smoky flavour. The menu debuted on 16 August 2024 and is now available.
Prior to the introduction of the new menu, we were invited to a 4-Hands Dinner tasting to savour the coveted beef. This exclusive dinner event was a prelude to the new menu, featuring other premium meats, such as the newly introduced milk-fed Moralejo Lamb, prepared using the traditional Asado grill method. The new offerings, along with the “Restaurants from Spain” certification awarded to UNA by The Spanish Institute for Foreign Trade (ICEX), highlighted UNA’s commitment to delivering an authentic and premium Spanish dining experience in Singapore, carefully curated by the culinary team.

Featuring traditional Spanish dishes like a grilled octopus leg, premium Iberico ham and a homely paella, UNA has everything we would expect from an authentic Spanish restaurant. The flavours were all on point and the full dinner experience felt like a culinary journey through Spain.
We were particularly impressed by the milk-fed lamb leg, which was tender and free of the gamey taste typically associated with lamb. The lamb is purely milk-fed and have never tasted grass before to preserve the meat flavour.
The Rubia Gallega beef was the highlight, with its clean taste and texture. We would recommend savouring it on its own, before indulging it with sauce to fully appreciate the natural flavour.
For dessert, the creme brulee, served table-side, was topped with fresh fruits that were lighted torched on pipping hot stones, dialing up the theatrical aspect of the dinner experience.
Overall, it was an exquisite experience in a quaint, serene environment. With the new menu now available, head down early to try the coveted Rubia Gallega beef before this batch of supply runs out as there is very limited quantity.
