Chef Ben Bayly, a prominent figure in New Zealand’s culinary scene, has launched Pou-o-Kai, a unique restaurant nestled beneath the dazzling skies of Kura Tawhiti (Castle Hill). This remarkable location, at the foothills of the Southern Alps, offers an unparalleled backdrop for an unforgettable culinary journey.
With New Zealand’s pristine dark skies, free from the effects of light pollution, the setting for Pou-o-Kai is as much a part of the experience as the food itself. The region is renowned for its spectacular Southern Lights and is part of the country’s broader commitment to preserving its night skies, making it a prime destination for the growing trend of astrotourism.
New Zealand is home to five of the world’s 17 accredited “dark sky reserves” and is on a path to becoming a “dark sky nation,” a title that reflects its dedication to protecting the beauty of its nocturnal landscapes, as recognized by the International Dark-Sky Association.
The exclusive opening of Pou-o-Kai saw guests, including local celebrities Joanne Peh, Qi Yuwu, Julie Tan, and online personality Darshen, indulging in a six-course degustation menu. Each dish, crafted with the finest winter produce and native ingredients, was a celebration of the rich culinary heritage of New Zealand, offering visitors a taste of the land’s natural bounty.
The restaurant’s name, Pou-o-Kai, was gifted by Ngāi Tuāhuriri, the local tangata whenua (people of the land), in homage to the majestic eagle that once soared the skies of Kura Tawhiti. This cultural touchstone adds a layer of meaning to the dining experience, connecting guests with the history and traditions of the region.
For those unable to visit Pou-o-Kai, Chef Ben Bayly plans to rotate select dishes from the menu across his other New Zealand restaurants, including Ahi, Aosta, Origine, Little Aosta, and The Bathhouse, located in Auckland, Queenstown, and Arrowtown, through August 2025.
