Embark on a Street Food Journey at Raffles Hotel Singapore’s First-Ever Regional Hawker Showcase

Raffles Hotel Singapore proudly presents the first-ever Regional Hawker Showcase at Raffles Courtyard, a celebration spotlighting Southeast Asian culinary heroes and their beloved street food specialties. Building on the success of the 2022 Hawker Stories series, Raffles Courtyard teams up once again with Makansutra to bring you an enthralling showcase featuring four remarkable hawkers and their unique delicacies from 3 July to 8 October 2024.

A Feast of Southeast Asian Delights

From Indonesia’s Pork Martabak to Vietnam’s Banh Khoai, the Regional Hawker Showcase promises a rich array of flavors that are rarely found in Singapore. Each hawker has been carefully selected in partnership with local food expert Makansutra and its founder, KF Seetoh. Hosted in the lush alfresco setting of Raffles Courtyard, each hawker’s specialty will be available exclusively for one week, offering guests a rotating menu of delightful street food.

Showcase Schedule

  • 3 to 9 July 2024: Pork Martabak by Pak Buyung Haryanto from Bandung, Indonesia. Pak Buyung, from a family of street food entrepreneurs, brings his innovative Pork Martabak to Singapore. This hearty, crispy roti, packed with eggs, coriander, onions, ham, and seasoned bacon, is served with a spicy sambal matah, a Balinese delicacy. His chocolate martabak, introduced at the 2016 San Francisco World Street Food Congress, won widespread acclaim.
  • 7 to 13 August 2024: Banh Khoai by Madam Ho Thi Tha from Hue, Vietnam. Madam Ho, a pioneer in Chuon Market Village, an all-women’s market, presents her Banh Khoai, a crispy savory pancake made from milled rice flour and topped with shrimp, squid, fish, and minced pork. Each serving comes with a piquant fish sauce, representing the heart and soul of Vietnamese cuisine.

Guests will have the chance to hear their inspiring stories and witness their dedication to their craft and cultural cuisine.

To complement the street food offerings, Raffles Courtyard will feature a curated selection of refreshing mocktails, cocktails, spirits, beers, and wines, enhancing your dining experience.
