This exclusive event, Heritage of Penang 2024, seeks to transport diners to the food capital of Malaysia through an array of authentic dishes curated by Executive Chef Andy Oh in collaboration with the Penang Chefs Association. If you love Penang food, you do not want to miss this limited time culinary offering at the Edge.

The buffet features a selection of Penang’s most beloved dishes, meticulously prepared to deliver an authentic taste experience. Signature items on the menu include Penang Rojak, Loh Bak (Ngoh Hiang Pork Rolls), Herbal Bak Kut Teh, Ter Ka Chor (Braised Pork Trotter with Black Vinegar), Curry Kapitan, and the ever-popular Char Kway Teow served from a live station.

Noodle lovers can look forward to Assam Laksa and Penang Prawn Noodles, while dessert options will feature the refreshing Penang Chendol and the chewy Muah Chee.

We were invited to a cooking demonstration by Chef Audee Cheah and Chef Tan Kim Chong, both from the Penang Chefs Association, followed by a dinner tasting session.

Chef Audee is the President of the Penang Chefs Association and a WorldChefs Certified Judge, with over 34 years of culinary expertise. He is well-respected for his proficiency in a wide array of cuisines, including European, Chinese, Malay, Nyonya, Thai, and other Asian delicacies. Alongside him is Chef Tan, a master of Penang Peranakan and Nyonya cuisine with 40 years of experience. Known for his works at Dragon King Restaurant and The Crown Jewel Hotel Penang, Chef Tan is frequently invited to promote Penang food internationally.

The two chefs provided a demonstration on how to prepare and cook authentic Penang-style Otak and Loh Bak (five spiced pork roll). Penang and Singapore shares the same Malayan culinary heritage, dating back to British colonial days. As such, many of their signature dishes share similar names and origins as the ones in Singapore, but with variation in the cooking style and taste. The otak and loh bak presented are different from the ones we are used to in Singapore and will be be delightful treats for those who crave these flavours.

I always find Penang hawker fares to be more authentically preserved than the ones we have in Singapore and the flavours to be a reflection of Singapore in our earlier, Nanyang days. I particularly enjoyed the Loh Bak dish, the Penang Char Kway Teow and the Cuttlefish dish which brought me fond memories of my culinary adventure in Penang during my travels there. Under the careful curation of the Penang Chefs Association, everything tasted as authentic as they can be, just like if you enjoyed them in Penang.

This Penang buffet spread at the Edge is a good opportunity for hawker food lovers to savour the best of authentic Penang food fares without having to physically travel there. On top of the Penang food offerings, you can also get to further fill your bellies with the other regular international buffet spread available at the Edge. The extensive buffet includes a variety of dishes from other cuisines such as Singaporean, Chinese, Malay, Indian, Japanese, Thai, and Western, ensuring a delightful experience for all guests.
