[Review] Dew by Whitegrass Redefines Casual Dining Experience at CHIJMES

Dew by Whitegrass, one of the latest additions to Singapore’s culinary scene, has officially opened its doors late last year. Nestled in the heritage wing of CHIJMES, this new establishment brings together the vibrancy of a casual atmosphere with the culinary excellence associated with the prestigious MICHELIN-starred Whitegrass restaurant.

At Dew by Whitegrass, the emphasis is on providing a relaxed social space where patrons can enjoy a fusion of tantalising cuisine and a laid-back environment.

Offering an innovative blend of European small plates with an Asian twist, the kitchen is led by a team of culinary and hospitality experts, including Chef Takuya Yamashita, the Executive Chef of Whitegrass and Chef Keita Seino. General Manager Vincent Tan, a well-known figure in the wine circles and Restaurant Manager Wendy Lim are dedicated to ensuring each dining experience at Dew is nothing short of exceptional.

One of the standout features of Dew by Whitegrass is its extensive selection of sake.

With approximately 65 labels on offer, including over 40 boutique varieties exclusive to Dew, this collection aims to provide an unparalleled sake experience sourced directly from various prefectures in Japan. The restaurant prides itself on offering a unique and diverse range that can’t be found elsewhere in Singapore.

The menu at Dew by Whitegrass boasts an array of exquisite dishes. We were invited for a dinner tasting and below are the items we sampled. Note that these were provided in sample portions and the full portions are much more generous in the portion size:

Verdict?

The snack-size items served are perfect for sharing among a group of friends, much like Spanish tapas. While each item seems simple at first glance, a lot of thoughts went into the creation to inject Asian flavours into what looks like European-style food. We particularly enjoyed the salmon, hamachi and proscuitto starters, each bringing a different symphony of flavours.

We also thought the potato bombs make so much sense as addictive bar food to go with drinks in the evening. The anchovy flavoured ones are highly recommended for something different.

For lunchtime indulgence, Dew offers a range of set lunches featuring curated rice bowls, warm somen in soups, silky udon, and more, starting from $28. You can explore options like the Swimming Unagi, Italy VS Japan, and Shiok! Oji Chick Don to satisfy your midday cravings.

For those who likes to pair good food with some alcohol, Dew is very proud of their star-studded sake collection which includes exceptional labels like Hirata Shoryunomai Junmai Ginjo, Hayakawa Tenkei Junmai Daiginjo 35%, and Takijiman Junmai Daiginjo 45%, among others. The collection offers an exploration into unique flavours and rare labels, making it a haven for sake enthusiasts.

Below were three of the sakes that were served as part of the sake pairing during our dining tasting. The bottle of Little Kiss Tea Liquer was also used to power up the cheesecake dessert to further enhance the sweet flavour.

All in all, Dew by Whitegrass offers a dynamic social space for casual meet-ups, after-work drinks, pre-dinner gatherings, or late-night rendezvous. This is a restaurant to head to for some boisterous fun and laughter.
