Italian-Asian Fusion Delights and Personalised Coffee Blend Await at A Cube Bistro @ MacPherson Road

A culinary fusion of Italian cuisine with local Asian influences has found its home at A Cube Bistro, nestled along the unassuming MacPherson Road. This newly launched hidden gem in the city fringe will appeal to both food enthusiasts and coffee aficionados alike with its innovative dishes and personalised coffee blends.

Aside from its food offerings, A Cube Bistro sets itself apart with its bespoke coffee blends. Sit down to the perfect cup of coffee that can be blended exactly to your liking by their skilled coffee barista; it will also named after you so you may simply pull up your name for the same cup the next time you visit. Talk about personalisation at the highest level!

The menu at A Cube Bistro features a diverse mix of Italian-Asian fusion dishes, catered for the Singaporean taste buds. We were invited for a dinner tasting and these were the items we sampled:

Breakfast Pizza: $22 – 12″ pie, yoghurt, mozzarella, bacon, potato, pickled onion, 63C egg, Mentai Mayo, chives
3M (Muscle Mussel Mouclade): $20 – local farmed live mussels, chige tomato broth, tomatoes, Lao Gan Ma persillade, mantou
Fish: $26 – crispy skin locally farmed barramundi, bacon and clam veloute, wilted gem lettuce, chive essence
Chicken: $26 – confit chicken breast, sesame ginger marmalade, roasted chicken gravy, tori kawa, choux farci, house sambal
Iberico Pork Collar: $28 – grilled iberico pork collar, gochujang jus, confit pork bon bon, apple fennel remoulade, apple mostarda
Duck: $28 – 48 hours dried duck leg confit, spiced honey glaze, potato sheets, farro and mushroom fricassee, tamarind jus
Chocolate milk shake

The three standout dishes for us were the Duck and Chicken mains as well as the signature, The Breakfast Pizza .

Said to be constructed from the chef’s own favourite breakfast items, The Breakfast Pizza tantalises taste buds with bacon, potato, pickled onion, mozzarella, mentai mayo, and a 63-degree poached egg. What seems like a crazy mix of East meets West ingredients actually blend well together to present a harmonious mix of sweet and savoury to perk you up for the day. While it is named as The Breakfast Pizza, the item is not just available for breakfast, but is a mainstay on the menu.

The Duck dish presents a 48-hour air-dried duck confit, glazed with spiced honey, served with potato sheets, farro, mushroom fricassee, and a drizzle of tamarind jus. This is a classic French fine dining dish that we thought was cooked well and offers good value for money.

For the Chicken dish, we find it amazing that the chef managed to put together a simple-looking presentation that tastes almost like the iconic Singapore-style Hainanese chicken rice, but is presented in a Western format. This is a fusion dish that actually works.

We like the spacious layout of the bistro with its casual, homely vibes. The price point is kept reasonably wallet-friendly as well and we can see how it will work well as a regular haunt for friends to gather for coffee or a casual catch-up meal.
