[Review] Savour Authentic North Indian Awadhi Cuisine at SanSara @ Grand Copthorne Waterfront Hotel Singapore

Grand Copthorne Waterfront Hotel is undergoing a S$30 million refurbishment and as part of the enhanced F&B offerings, a new North Indian restaurant, SanSara, has been added and recently launched.

SanSara faces the Singapore River for a riverfront dining experience and serves authentic North Indian Awadhi cuisine, said to date back over 5,000 years with influence from Mughal, Turkish and Persian flavours.

The restaurant is led by Master Chef Akhilesh Pathak, marking his maiden venture in Singapore after a successful career in esteemed luxury restaurants across North India.

We were invited for a dinner tasting on the opening night and these were the items we savoured a mix of dishes from their main menu as well as their Diwali set menu, priced at $68 per pax, with both vegetarian and non-vegetarian options available:

Crackers to start, with assorted pickle and sauces
Kumbh Ki Galouti (sampling portion) – served as an appetiser, kebab style, this dish is made from minced button mushrooms, cooked with aromatics and herbs like saffron, cajun spice and galout masala, shaped into a patty
and served on a bed of soft paratha, for a soft and melt-in-the-mouth flavour.
Lentil soup and yoghurt
Non-vegetarian appertiser:
Gosht Gilafi Kebab: Minced Lamb, Tomato, Onion, Green Capsicum
Murgh Bardari Tikka: Chicken, Curd, Cashew, Yellow Chilli Powder
Vegetarian appertiser:
Subz Shami Kebab: Mixed Vegetable, Saffron, Onion, Lazzat-E-Taam Masala
Surkh Balai Kebab: Cottage Cheese, Yoghurt, Spiced Prune, Crushed Nut, Mathania Chilli
Non-vegetarian mains:
Gosht Ahuna: Lamb, Garlic, Onion |Tomato
Murgh Changezi: Chicken, Tomato Gravy
Malai Jheenga: Prawn, Turmeric, Coconut Yoghurt, Tomato, Onion
Masala Keema Saag: Organic Greens, Cumin, Garlic, Onion
Vegetarian mains:
Aloo Hara Pyaaz Masala: Potato, Cashew, Onion, Tomato, Green Onion
Kofta Lazeez: Cashew, Tomato, Onion, Saffron
Keema Saag: Organic Greens, Cumin, Garlic
Dal Kabila: Mixed Lentil, Garlic, Cumin, Dried Chilli
Choice of Bread to go with the Mains: Naan, Roti, Laccha Paratha
Awadhi Gosht Briyani: originating from the Mughal dynasty, this biryani combines fragrant Basmati rice, slow-cooked with a range of selected spices like saffron, cardamom, turmeric, cashew nut paste, garam masala over layers of soft and tender generous pieces of lamb.

Kulfi Falooda – served sundae style, this sweet treat combines the robust flavours of kulfi, also fondly referred to as
‘Indian Ice Cream’. This dessert sits on a bed of condensed milk, strings of sweetened vermicelli, and crunchy basil seeds, infused with aromatic rose syrup, for a burst of flavour in every bite.

While we are not experts in Indian cuisine, we know good food when we savoured them and the food at SanSara was delightful, offering a mix of spices and aromatic flavours. We especially enjoyed the biryani, one of the best we have tasted, slow-cooked to perfection.

There aren’t a lot of higher end Indian restaurants by the waterfront in the Havelock Road area and SanSara will be able to add to the overall, diverse range of culinary offerings there.

“We are beyond excited to welcome guests to SanSara, encapsulating the true taste of North India. We want our guests to feel at home while experiencing robust flavours and a culinary experience like no other when they walk through the doors. The restaurant not only complements our diverse portfolio at Grand Copthorne Waterfront but also embodies our commitment to offering exceptional culinary experiences, featuring global flavours to suit every palate.” Shared Saurabh Prakash, Group Senior Vice President, Commercial, Millennium Hotels & Resorts, at the opening launch of SanSara to invited guests.

The curated menu at SanSara offers a wide range of a la carte and set menus, including vegetarian options, creative drinks, and an extensive wine list. With Deepavali nearing, this may be a good time to visit SanSara to try out their Diwali set menu.

SanSara is now open and reservations can be made via the official website. My Millennium members can enjoy a 25% discount off the total bill from now until December 31, 2023.
