[Review] Dopo Teatro Ristorante & Bar at Esplanade – Theatres on the Bay

Dopo Teatro is a new Italian dining concept by F&B group, Creative Eateries, the group behind iconic restaurant franchises like Bangkok Jam, Flaming Don and Suki-Ya Shabu Shabu.

With handstretched pizzas and other traditional Italian dishes as their signature, Dopo Teatro, signifying “After theatre” in Italian, seeks to be where a slice of traditional Italian cuisine meets modern interpretation. The menu features an ensemble of old and new, featuring traditional recipes, from antipasti, soups and salads, to housemade pastas and handstretched pizzas to modern fusion delights.

Located at the al fresco dining area at the Esplanade, Dopo Teatro is a great place to grab a hearty, casual bite, after watching a theatre performance or other art programming at the venue:

We were invited for a tasting of their limited-time 5-course dinner menu ($78++ per pax) put together for the Singapore Restaurant Week.

These were the items we sampled:

Housemade bread to start
Oyster – smoked sakoshi oyster, oyster tartare, forced cucumber hearts, oyster buttermilk, granny smith gel, parsley oil and ice plant
So you can see the juicy, fresh oyster
Zuppa – cauliflower veloute, shaved cauliflower chips, sage oil, crumbled gorgonzola and focaccia
The texturing of the soup
Agnolotti – beef cheek, parmesan potato espuma, tempura enoki and marmite glaze
Intermezzo – Yuzu Cucumber Granita
Main Choice 1: Pork – 48hrs sous vide belly of pork, diavola glaze, garlic pomme puree, granny smith gel, cabbage remoulade, yuzu chige beurre blanc and pickled myoga
Main Choice 2: Fish – locally farmed barramundi, scallop mousseline, burnt hojicha, veloute, saffron potatoes, sake clams and shimeiji salsa and torched leeks
Sweet – brick cigar, yuzu lemon curd, lemon sorbet, grappa spiked strawberry compote and granola crumble

Overall, the modern rendition of Italian cuisine was pretty good. We didn’t try their traditional, signature items, but what we sampled was of quality. The attention to details was there and there is thoughtfulness in the plating as well as the fusion of flavours with the ingredients used.

I particularly enjoyed the beef cheek agnolotti, paired with Asian enoki mushrooms and marmite glaze which is a familiar taste in this part of the world.
