[Review] Refined and Relaxed Mediterranean fare with a view: The Lounge at Riviera, One Fullerton

Treat your taste buds to a tour of the diverse Mediterranean region at The Lounge at Riviera. A new concept by the fine dining restaurant Riviera, The Lounge at Riviera, as its name implies, serves up a more casual dining experience with ala cart options and platters for sharing. Perfect for those looking for more relaxed vibes at fine-dining quality!

For dinner, suggest coming in the earlier part of the evening at around six-plus, to be thoroughly awed by the natural light let in by the floor-to-ceiling glass façade of the restaurant.

A stupendous view spanning Fullerton Hotel to Marina Bay Sands with the iconic Singapore Flyer in the backdrop awaits you. Not to worry if you can only make it later; the night lights of the vibrant bay area is yet another sight to behold.

The brains behind the new menu for The Lounge at Riviera are executive chef Remy Carmignani and executive pastry chef Nicolas Vergnole, both with years of experience in Michelin-starred restaurants under their belts.

The menu takes diners on a gastronomic tour across the sun-drenched Mediterranean coasts, from Italy, Southern France, Greece, and Spain, all the way to exotic Morocco.

If you are in a group, consider starting your meal with the Riviera Platter ($88*) which showcases half a dozen freshly-shucked Fine de Claire Oysters, Smoked Cod Roe Tarama with House-made Potato Blinis, Dorade Royal Tartar with Ginger Dressing and stunning ruby-hued Beetroot-Cured Scottish Salmon made in-house.

Toasted Rosemary Sourdough ($6*)

Enjoy the bread with balsamic vinegar and olive oil. Do you prefer your olive oil light and floral or earthier in flavour? The attentive servers will gladly provide you with both.

Country Loaf ($6*)

Made from slow-braised lamb shoulder, the Grass-Fed Lamb Croquetas ($18*) are tender on the inside and crispy on the outside. The earthiness of the lamb is complemented with a sweetish low-heat pepper paste.

Looking similar to Indian Samosas, the Moroccan Briouates ($18*) filled with whey cheese and spinach are mild in taste and enlivened by the accompanying spicy arrabbiata sauce.

Moving on to mains, there’s the Tajines Makfoul ($48* for 2 persons/ $78* for four persons) – Chef Rémy’s take on an authentic Moroccan Slow-Cooked Grass-Fed Lamb Shank tajine, served with silky Lamb Jus-coated Barley with Almonds and freshly-baked Moroccan Batbout Bread.

From the European Mediterranean, we have the Greek Dorade Royale en Papillote ($58*), the freshest sea bream prepared with Mediterranean Chermoula, Taggiasca Olives, Fresh Chili, Preserved Lemon and Ratte Potato, steamed to perfection in a parcel, which is lovingly and delicately opened at the table when served, releasing incredible aromas from all the vibrant ingredients.

Be sure to leave some room for dessert as you’d want to try the Chef Nicolas’s innovative creations. The Mon Choux ($18*) features Glenfiddich 15YO Whisky-infused Choux Puffs filled with Salted Caramel Ice Cream, and
Cubebe Pepper-infused Dark Chocolate Sauce drizzled at the table.

Those with a sweet tooth would enjoy the Riviera Macarons ($15*) which features three good-sized macarons sitting on a bed of cacao nibs.
