Dine la dolce vita at the newly-revamped Dolce Vita in Mandarin Oriental Singapore

Italian food may be ubiquitous but truly authentic and fine-tasting Italian food isn’t.

Which better Italian restaurant to hit up for an epicurean feast you won’t find any fault with.

The newly revamped Dolce Vita housed in Mandarin Oriental Singapore is the spot Italian foodies have searched hither and thither for.

Contemporary take on Italian cuisine

Chef Marco Manocchio hails from the riveting city of Rome, Italy; bringing his signature and authentic Italian flavours to the tables of diners at Dolce Vita. The new and thoughtfully curated menu introduces contemporary creations using bold, fresh and authentic Italian ingredients.

Chef Marco gives the classic Northern Italian rice dish – Risotto – a new meaning. Using Special riserva Acquerello rice, the Risotto at Dolce Vita tastes nothing like your average creamy rice dish.

Risotto, S$30.

The creamy consistency of the Risotto was just on-point; without it being overly viscous. In fact, there was a surprising element of zest to it with yuzu – an ingredient you might never associate with Risotto. Nonetheless, this pairing rocked our socks off because now we absolutely adore this mainstay in every Italian menu.

As you dig into this classic yet contemporary dish, another surprise awaits. While the use of mimosa egg in risotto is far from common, it may very well be after this dish becomes a hit.

Tortelli, S$36.

The Tortelli was only pleasing to the eyes but satisfying for the tummy, especially with its well-cooked tomato confit seared langoustine. It was in the least bit overpowered by the intense flavour of tomato while retaining its own sapid flavour – which we thought was the highlight of the dish.

Given the unique medley of flavour from the homemade tortelli, Caciucco burrata flakes, marjoram and langoustine, it made for a simply divine combination. If anything, Tortelli has stolen our hearts away.

Textured cheese air-flown from Naples

Whether you are a cheese aficionado or not, you will be digging this light-tasting Treccia Campana di bufala from Naples. This handmade buffalo mozzarella is a fresh mozzarella from the southern part of Italy.

Cast all your preconceptions of cheese being overly milky and full-bodied flavour aside as soon as you try Treccia Campana di bufala.  The sweet and delicate taste you get upon a bite of this chewy goodness comes from spinning, cutting and twisting the milk curd reiteratively in an elaborate process by the cheesemaker.

From this exquisite starter alone, you know just how particular Italians are with their cheese. No one’s certainly complaining about that.

Slabs of steak you can’t resist

How can you say no to such gastronomic delights?

Dolce Vita brings in various cuts of steak from various countries across the world to bring to the table some of the best-tasting steaks. The roasted US prime beef bone-in ribeye used in Tagliala di manzo is carefully selected from the United States, based upon its distinct taste and texture.

It’s hard not to bust your diet upon the sight of such glorious cuts of steak. All self-restraint also simply flies out of the windows as you bite into the tender and juicy rib-eye in Tagliata di manzo.

Discerning diners can be sure what Dolce Vita offers its guests are at its finest, especially with painstaking efforts even in finding the best taste and texture for an epicurean experience.

Artisanal desserts are the way to end an Italian meal

Pannacotta, S$16.

It isn’t a complete Italian meal without rounding it off with some artisanal desserts.

Pannacotta is one star dessert you must have in Dolce Vita. Served alongside pistachio crumble, berries and smoked milk ice cream, this creation is in itself a enamouring sight to revel in. Before you get carried away swooning over how gorgeous it looks, don’t forget that it’s edible too.

Tiramisu, S$16.

Otherwise, if you have a penchant for the good ol’ Tiramisu, the one at Dolce Vita enticed us with its crunchy chocolate textures and subtle hints of espresso any coffee lover would relish. It is easy to be sold with these aesthetic creations – not just for their inviting sights – but their light and ethereal taste that weren’t at all excessively sugary.

Anytime you need to satiate your fix for fancy Italian fine-dining, you can’t get any better than with Dolce Vita.
