Head Chef Marco Guccio comes from Italy and draws culinary inspiration from both his family’s roots in Southern Italy – Sicily and Calabria – as well as those based around his upbringings in Milan.

Prior to his appointment to Zafferano, Chef Marco helmed the kitchens of leading Italian restaurants in Singapore like ilLido Italian Dining, Otto Ristorante and Garibaldi. He was the Executive Chef at Alkaff Mansion just before he joined Zafferano and was a finalist in Rising Chef of the Year and Best Restaurant for the World Gourmet Summit 2013.

Me with Chef Marco Guccio and the restaurant manager, Paolo Colzani

I had the honour of taking some of Chef Marco’s creations during a tasting session. These are the dishes sampled:

This is life!
Starters
Bread
Marinated Scottish salmon, quail eggs and green asparagus, Avruga caviar – to be paired with 2013 De Stefani, Grand Cuvee Prosecco
Pan-seared Hokkaido scallops, Jerusalem artichoke cream veloute, sautéed chanterelle mushrooms – paired with 2010 Livio Felluga, Pinot Grigio
Close-up of the scallop and mushroom
Hand-crafted Agnolotti filled with ox-tail, celeriac puree and toasted pistachio – paired with 2011 Paolo & Noemia d’Amico, Notturno Calanchi
The filling inside the Agnolotti
Slow-cooked US prime beef short ribs, sautéed potatoes and asparagus, veal reduction – paired with 2012 Nittardi, A.D. Astra

Cold strawberry soup, homemade yogurt ice cream, 12 years old balsamic – paired with NV Bottega, Fraolino Rosso
Macarons

Honestly, this is one of the best tasting I had been to recently and I go to a lot of tastings. I am assured the quality and tip-top service standard is the same for walk-in customers.

I enjoyed all the dishes. To single out a standout dish, it would probably be the Agnolotti which may not be as beautiful looking as the other dishes, but is so rich in flavour when you sink your teeth in.

The scallops as well as the short ribs dishes were all cooked to perfection and playful with the tastebuds. The dessert looks like there’s a lot going on, but it is really a very pleasing strawberry soup to round up the meal.

The scallops, short ribs, marinated salmon and Agnolotti are all listed as signature dishes and I would recommend these as well.
