Concorde Hotel Singapore’s Lunar New Year Special Menu

I had my first yusheng this year at Concorde Hotel Singapore, during a tasting for their Lunar New Year Special menu. I always had the impression that they are a more westernised restaurant and was surprised to find very traditional chinese flavours.

Here are the items sampled:

Salmon & Tuna Yu Sheng
Tossing my first yusheng for the year
Live Prawns with Chinese Herbs and Wine
Baked Pork Rib with Sweet Orange Sauce
Tender and moist
Steamed whole Garoupa with Soya Sauce and Fried Garlic
Check out the large chunk of tender Garoupa
Braised Lobster and Abalone with Chinese Mushroom and Kai Lan

Steamed New Year Nian Gao with Grated Coconut

 The highlight for me was the baked pork ribs with sweet orange sauce. I like the colour to the dish and the use of orange was just right for Chinese New Year. The glaze was beautiful and the meat was tender and moist when you sink your teeth in. All in all, an auspicious and pretty looking dish to savour at the start of the year.

The other dishes were mostly standard fares and were of consistent quality. The nian gao with grated coconut at the end was a nice mix of local flavours to a traditional chinese ingredient.

This menu is available from 9 to 22 February.
